The elderflowers (Sambucus nigra) are looking particularly lovely in flower all over the place at the moment and they smell amazing, especially in the early evening.  The easiest (and least sugary) way to make an elderflower cordial is to take a sprig or two of the flowers (don’t forget to ask the elder mother’s permission beforehand! ;p), wash them, then put them in a jug of cold water and leave to infuse for an hour or two.  Refreshingly tasty and may just help with hayfever symptoms.
